1/3 cup Two Rivers Blood Orange EVOO
1/3 cup honey
2 teaspoons vanilla extract
1 cup peanut butter
2 cups dry oatmeal
1 1/3 cups shredded coconut, unsweetened
1/2 cup ground flaxseed
Fold in the oats, coconut, and ground flax seed until well combined and chill in the fridge for about 1 hour.
Once chilled, press them into balls of your desired size. Snack-sized bites are super fun. You can store these in an airtight container for up to a week.
Makes 25-28 bites
